4 Easy Recipes To Make Family Life Healthier This Summer

As the summer holidays are fast approaching, you may be looking for a way to keep the young ones occupied – or perhaps you’ve always wanted to get the kids in the kitchen with you.

At Prep, we want you to be able to enjoy easy, delicious meals together as a family. So with this in mind, we’ve selected some simple recipes that you can follow together to create some healthy summer treats!

Some Paprika Prawn Cocktail

A quick and easy recipe for the kids to get themselves involved with, and it makes the perfect summer snack when served with nice green lettuce leaves, or as a jacket potato topper.

What you’ll need:

200g cooked king prawns
75g or around 6 tbsp mayonnaise
20g or around 3 tbsp ketchup
dash of Worcestershire sauce
few pinches of paprika (optional)
finely grated zest of 1 lemon, plus slices to serve


Mix the mayonnaise, ketchup and Worcestershire sauce together in a large bowl.
Add the prawns into the mix, and stir it all up.
Once the prawns are coated in the mix, cover the bowl and stick it in the fridge until ready.
When ready, place spoonfuls of the prawn cocktail mixture into small lettuce leaves, of you prefer use as a baked potato topping.
Garnish with a little paprika if you like, or serve with slices of lemon.

Beautiful Butternut Squash Pilaf

There’s nothing quite like a nutritiously vibrant veggie squash pilaf. This flavourful rice dish, can be topped up with onions and an also be packed with plenty of fruit and nuts. It’s a super healthy delightful dish that will keep the whole family coming back for more.
What you’ll need:

350g ready-diced butternut squash
225g basmati rice
1 crushed garlic clove
1 tbsp vegetable oil
1 onion chopped
1 tbsp tagine spice blend
roughly 1 inch piece root ginger, peeled and grated
600ml vegetable stock
100g fruit & nut mix


Pre-heat a large pan on medium heat.
Place onion with oil into the pan, cook until onion softens.
Place the tagine spice blend into the pan, then the butternut squash and basmati rice.
Fry everything until it sizzles.
Add the ginger and garlic.
Keep frying for another 30 or so seconds.
Add the fruit and nut mix.
Place the lid on the pan, but keep stirring every 5 mins, for around 20 mins total.
Serve once all the stock is absorbed and the rice is fully cooked.
Top it up with chopped parsley and crispy fried onions as an optional extra.

Healthy Homemade Burgers

Not all burgers are bad for you, and these healthy homemade burgers can make for a fun family meal, to make and enjoy.

What you’ll need:

500g minced beef
1 tsp paprika
1 tsp dried parsley
3 spring onions
black pepper
2 cloves garlic


Wash and chop spring onions into small pieces.
Peel and crush garlic.
Place all ingredients into a bowl.
Mix the ingredients together with hands (kids will love this bit!)
Split mixture into four equal pieces.
Roll pieces into balls, then squash to make burger shapes.
Place on the grill for around 15 minutes, turning once.

Fun Fruit Filled Jam Tarts

Now we couldn’t possibly finish this first batch of easy recipe recommendation without at least one healthy sweet treat. And these extra fun and fruity jam tarts are not only easy to make, they’re an ideal dessert dish for the summer.

Get yourself some ready-made pastry so that creating these tantalising tarts is even easier, or make your own if you like.

What you’ll need:

approx 250g ready made shortcrust pastry
200g strawberries
1 tbsp lemon juice
1 dessert apple
strawberry jam
a 12 hole muffin tin


Prepare by pre-heating the oven to 180°C (Gas mark 4/350°F).
Brush the muffin tin with some oil.
Roll out some flour and pastry onto a smooth surface.
Cut out 12 circles of pastry using a large circle cutter.
Push each pastry circle into a hole in the muffin tin to form a cup.
Place a small teaspoon of jam into the bottom of each pastry cup.
Chop strawberries into quarters.
Mix lemon juice into bowl of cold water.
Chop apple into pieces, soak pieces in lemon water, then drain them dry.
Fill tarts with strawberry and apple pieces.
Bake in the pre-heating oven for 20-25 minutes until pastry is golden and the fruit is fully cooked.
